Kumara (Sweet Potato) Soup

Serves 6-8

Simon and two friends, Richard and Dan, made a return appearance at Soup & Bread this week to help raise money for, well, HELP — which Simon is is involved with in some form. Says he: “Kumara is the New Zealand Maori name for sweet potato. The recipe comes from the Edmonds Cookery Book, a staple in New Zealand kitchens for over 100 years. I borrowed my mum’s copy. Enjoy.”

Ingredients

25 g butter (about 2 tablespoons)
1 large kumara (sweet potato), chopped
1 small onion, chopped
1 large potato, chopped
1 1/2 teaspoons hot curry powder
3 cups chicken broth
1 cup milk
salt
chopped chives

Preparation

Melt the butter in a saucepan. Add kumara, onion, potato and curry powder. Cook until onion is clear. Stir in chicken broth and bring to a boil, simmer gently until vegetables are tender. Purée with a hand blender or in a food processor until smooth. Add the milk and salt. Reheat until almost boiling. Serve garnished with chives.
